Ingredients

  • 1 lb of boneless chicken breasts, diced
  • 2 tablespoons of olive oil
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried basil
  • 6 cups of chicken stock
  • 1/2 lb of egg noodles
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until golden brown, about 5 minutes.
  2. Add the onion, garlic, carrots, and celery to the pot and cook until the vegetables are softened, about 7 minutes.
  3. Add the oregano, thyme, and basil to the pot and stir to combine.
  4. Pour in the chicken stock and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes.
  5. Add the egg noodles to the pot and cook until the noodles are tender, about 7 minutes.
  6. Stir in the parsley, season with salt and pepper to taste, and serve.
