Ingredients
1 lb of boneless chicken breasts, diced
2 tablespoons of olive oil
1 large onion, diced
3 cloves of garlic, minced

2 stalks of celery, diced

6 cups of chicken stock

Directions
Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until golden brown, about 5 minutes.
Add the onion, garlic, carrots, and celery to the pot and cook until the vegetables are softened, about 7 minutes.
Add the oregano, thyme, and basil to the pot and stir to combine.
Pour in the chicken stock and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes.
Add the egg noodles to the pot and cook until the noodles are tender, about 7 minutes.
Stir in the parsley, season with salt and pepper to taste, and serve.
