Ingredients

  • 1 head cauliflower, chopped into florets
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 eggs, beaten
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup tomato sauce
  • 1/2 cup mushrooms, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup olives, sliced
  • 1/4 cup onion, diced

Directions

  1. Preheat oven to 425 degrees F.
  2. In a food processor, pulse the cauliflower florets until they are the consistency of rice.
  3. Place the cauliflower in a microwave-safe bowl, cover, and microwave for 5 minutes.
  4. Let the cauliflower cool, then add the mozzarella, Parmesan, eggs, Italian seasoning, salt, and pepper. Stir to combine.
  5. Spread the mixture onto a parchment-lined baking sheet and form into a round shape.
  6. Bake for 15 minutes, then remove from oven.
  7. Top with tomato sauce, mushrooms, bell pepper, olives, and onion. Bake for an additional 10 minutes, or until cheese is melted and bubbly.
  8. Let cool for 5 minutes before slicing and serving.
