Zucchini Pasta with Pine Nuts

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 large zucchini, diced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup pine nuts, toasted
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 8 ounces dry pasta

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté until softened, about 3 minutes.
  3. Add the zucchini and season with salt and pepper. Cook until the zucchini is tender, about 5 minutes.
  4. Add the sun-dried tomatoes, pine nuts, parsley and basil and cook for 1 minute.
  5. Add the Parmesan cheese and stir to combine.
  6. Add the dry pasta to the boiling water and cook according to the package directions.
  7. Drain the pasta and add it to the skillet with the zucchini mixture. Toss to combine.
  8. Serve hot.
