Ingredients
- 1 lb. boneless, skinless chicken breast
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup roasted peanuts, chopped
- For the Dressing:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon chili garlic sauce
- 2 cloves garlic, minced
Directions
- In a medium saucepan, bring water to a boil and add chicken breasts. Cook for 8-10 minutes, or until chicken is cooked through. Remove chicken from heat and let cool. Once cooled, dice chicken into small cubes.
- In a large bowl, combine cucumber, red onion, cilantro, and peanuts. Add diced chicken and stir to combine.
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, chili garlic sauce, and garlic. Pour dressing over chicken salad and stir to combine.
- Serve chilled or at room temperature.
