- 3 cups vegetable broth
- 1 cup orzo
- 2 cups fresh baby spinach
- 1/4 cup feta cheese, crumbled
Directions
- Heat the oil in a large skillet over medium heat. Add the onion and sauté for 3 minutes.
- Add the mushrooms, garlic powder, thyme, salt, and pepper. Cook, stirring often, until the mushrooms are caramelized, about 8 minutes.
- Add the vegetable broth and orzo to the skillet. Bring to a boil.
- Reduce the heat and simmer, stirring often, until the orzo is cooked, about 8 minutes.
- Add the spinach and stir until wilted, about 2 minutes.
- Turn off the heat and stir in the feta cheese. Serve hot.
