Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 pound mushrooms, cleaned and sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups vegetable broth
  • 1 cup orzo
  • 2 cups fresh baby spinach
  • 1/4 cup feta cheese, crumbled

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and sauté for 3 minutes.
  2. Add the mushrooms, garlic powder, thyme, salt, and pepper. Cook, stirring often, until the mushrooms are caramelized, about 8 minutes.
  3. Add the vegetable broth and orzo to the skillet. Bring to a boil.
  4. Reduce the heat and simmer, stirring often, until the orzo is cooked, about 8 minutes.
  5. Add the spinach and stir until wilted, about 2 minutes.
  6. Turn off the heat and stir in the feta cheese. Serve hot.
