Ingredients
- 1 cup (225 g) butter, softened
- 2 cups (400 g) granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups (300 g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (120 ml) milk
- 1/4 cup (60 ml) fresh lime juice
- 2 tablespoons chopped fresh mint leaves
- 1/4 cup (60 ml) white rum
- 1/4 cup (60 ml) simple syrup
Directions
- Preheat the oven to 350°F (180°C). Grease and flour a 9x5-inch (23x13 cm) loaf pan and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until just combined.
- In a small bowl, mix together the milk, lime juice, mint leaves, rum, and simple syrup. Add to the batter and mix until just combined.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before removing to a wire rack to cool completely.
