Ingredients

  • 4 bell peppers in assorted colors (red, yellow, orange, green)
  • 1 cup black beans, cooked
  • 1 cup corn kernels, cooked
  • 1/2 cup red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped
  • 1/2 cup shredded cheese
  • 1/4 cup plain Greek yogurt

Directions

  1. Preheat the oven to 350°F.
  2. Cut the bell peppers in half lengthwise and remove the seeds. Place the peppers cut-side up in a baking dish.
  3. In a medium bowl, mix together the black beans, corn, red onion, garlic, chili powder, cumin, smoked paprika, salt, and black pepper.
  4. Divide the mixture evenly among the pepper halves, filling them to the brim. Top with the shredded cheese.
  5. Bake for 20 minutes, or until the peppers are tender and the cheese is melted and golden brown.
  6. Serve the peppers warm, topped with the Greek yogurt and cilantro.
