Ingredients
- 1 lb boneless skinless chicken breasts
- 1/2 cup chicken broth
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup freshly squeezed lime juice
- 2 tablespoons chopped fresh cilantro
Directions
- In a medium bowl, combine the chicken broth, olive oil, garlic, cumin, oregano, paprika, salt, and pepper. Whisk together until well combined.
- Place the chicken breasts in the slow cooker and pour the marinade over the top. Cover and cook on low for 4-6 hours.
- Once the chicken is cooked through, remove from the slow cooker and shred with two forks.
- In a small bowl, whisk together the lime juice and cilantro. Pour over the shredded chicken and stir to combine.
- Serve the chicken over rice, in tacos, or in a salad.
