Ingredients
- 1 cup fresh passion fruit pulp
- 1/2 cup sugar
- 1/4 cup heavy cream
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1 cup heavy cream, chilled
Directions
- In a small saucepan, combine the passion fruit pulp, sugar, cream, cornstarch, vanilla, and salt and stir until combined.
- Heat the mixture over medium heat, stirring constantly, until it thickens and boils.
- Remove from heat and stir in the butter until melted.
- Transfer the mixture to a bowl and let cool.
- Once cooled, whip the chilled heavy cream until stiff peaks form.
- Fold the whipped cream into the cooled passion fruit mixture until combined.
- Transfer the mousse to individual serving dishes or one large dish.
- Chill the mousse in the refrigerator for at least 2 hours before serving.
