Ingredients
1 cup fresh passion fruit pulp
1/2 cup sugar
1/4 cup heavy cream
2 tablespoons cornstarch
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons butter
1 cup heavy cream, chilled
Directions
In a small saucepan, combine the passion fruit pulp, sugar, cream, cornstarch, vanilla, and salt and stir until combined.
Heat the mixture over medium heat, stirring constantly, until it thickens and boils.
Remove from heat and stir in the butter until melted.
Transfer the mixture to a bowl and let cool.
Once cooled, whip the chilled heavy cream until stiff peaks form.
Fold the whipped cream into the cooled passion fruit mixture until combined.
Transfer the mousse to individual serving dishes or one large dish.
Chill the mousse in the refrigerator for at least 2 hours before serving.
