Ingredients
- 1 (13.5 ounce) can coconut milk
- 1/4 cup sugar
- 1/4 cup lime juice
- Zest of 1 lime
- 1/4 teaspoon salt
Directions
- In a medium saucepan, combine the coconut milk, sugar, lime juice, lime zest and salt.
- Place the saucepan over medium heat and stir until the sugar has dissolved.
- Remove the saucepan from the heat and let cool for 10 minutes.
- Pour the mixture into ice pop molds and freeze for 4 hours or overnight.
- To release the pops from the molds, run them under warm water for a minute or two.
