Microwave Mississippi Mud Cake

Ingredients

• 1/2 cup butter, melted
• 1/3 cup cocoa powder
• 1/2 cup all-purpose flour
• 1/2 cup granulated sugar
• 1/4 teaspoon salt
• 1/4 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1/2 cup sour cream
• 1 teaspoon vanilla extract
• 1/2 cup miniature marshmallows

Directions

1. In a medium bowl, combine the melted butter and cocoa powder, stirring until smooth.
2. Add the flour, sugar, salt, baking powder, and baking soda, stirring until combined.
3. Add the sour cream and vanilla extract and stir until the mixture is smooth.
4. Spread the batter into a greased 8-inch microwave-safe dish.
5. Sprinkle the marshmallows over the top of the cake batter.
6. Microwave on high for 2-3 minutes, or until the cake is cooked through.
7. Let the cake cool and serve.
