Ingredients

  • 4 boneless pork chops
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 clove garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 1 bunch kale, chopped

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the pork chops and cook for 4 minutes per side, or until golden brown and cooked through.
  3. Remove the pork chops from the skillet and set aside.
  4. Add the onion and garlic to the skillet and cook for 5 minutes, stirring occasionally.
  5. Add the thyme, oregano, salt, and pepper and cook for 1 minute.
  6. Add the chicken broth and kale to the skillet and cook for 5 minutes, stirring occasionally, until the kale is wilted.
  7. Return the pork chops to the skillet and cook for 2 minutes, or until heated through.
