Ingredients
1 package (9 ounces) refrigerated cheese tortellini
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
2 cups baby spinach
1/2 cup vegetable broth
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Directions
Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, about 8 minutes.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring, until the onion has softened, about 5 minutes.
Add the red pepper flakes and spinach and cook, stirring, until the spinach has wilted, about 2 minutes.
Add the broth and cream and bring to a simmer. Simmer until the sauce has thickened, about 3 minutes.
Add the Parmesan cheese and season with salt and pepper, to taste.
Add the cooked tortellini and stir to combine.
Serve immediately.
