Ingredients

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups baby spinach
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, about 8 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring, until the onion has softened, about 5 minutes.
  3. Add the red pepper flakes and spinach and cook, stirring, until the spinach has wilted, about 2 minutes.
  4. Add the broth and cream and bring to a simmer. Simmer until the sauce has thickened, about 3 minutes.
  5. Add the Parmesan cheese and season with salt and pepper, to taste.
  6. Add the cooked tortellini and stir to combine.
  7. Serve immediately.
