Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 ounces semi-sweet chocolate, melted and cooled
  • 3/4 cup granulated sugar
  • 1/2 cup butter, at room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup sweetened coconut flakes

Directions

  1. Preheat the oven to 350 degrees F and lightly grease an 8-inch round cake pan with butter or baking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In the bowl of a stand mixer, beat together the melted chocolate and sugar until combined. Add the butter and beat until light and fluffy. Add the eggs one at a time, mixing until each is incorporated. Add the vanilla extract and mix again.
  4. Add the dry ingredients in three additions, alternating with the buttermilk, mixing until just combined. Fold in the coconut flakes.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before serving.
