Indulge in a flavorful and creamy pasta dish with a twist of roasted poblano peppers. The smoky and slightly spicy flavor of the poblano peppers pairs perfectly with the creamy sauce and pasta, creating a truly satisfying meal.

Ingredients

  • 2 poblano peppers
  • 8 oz pasta of your choice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Roast the poblano peppers over an open flame or under the broiler until charred on all sides. Place in a bowl and cover with plastic wrap to steam for 10 minutes. Peel off the charred skin, remove seeds, and chop the peppers.
  2. Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the chopped poblano peppers to the skillet and stir to combine.
  5. Pour in the heavy cream and bring to a simmer. Add in the Parmesan cheese and stir until melted and smooth.
  6. Season with salt and pepper to taste. Add the cooked pasta to the skillet and toss to coat, adding reserved pasta water if needed to loosen the sauce.
  7. Serve hot, garnished with additional Parmesan cheese and a sprinkle of black pepper.
