Ingredients

  • 2 lbs chicken thighs
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. Season chicken thighs with salt and pepper.
  2. Turn on the Instant Pot and select the sauté function. Heat olive oil and brown chicken thighs on both sides.
  3. Remove chicken and set aside. Add garlic to the pot and sauté until fragrant.
  4. Deglaze the pot with chicken broth, scraping off any brown bits from the bottom.
  5. Add butter, heavy cream, lemon juice, and lemon zest to the pot. Stir to combine.
  6. Return chicken thighs to the pot. Close the lid and set the Instant Pot to High Pressure for 10 minutes.
  7. Release pressure naturally for 5 minutes, then do a quick release.
  8. Remove chicken from the pot and set aside. Turn on the sauté function again and reduce the sauce to desired thickness.
  9. Serve chicken thighs with the creamy lemon garlic sauce and garnish with fresh parsley.
