Ingredients

  • 1 medium sized pumpkin
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp curry powder
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Directions

  1. Preheat the oven to 400°F. Cut the pumpkin in half and scoop out the seeds. Place the halves on a baking sheet, drizzle with olive oil, and roast for 40-45 minutes until tender.
