Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 cup tahini
  • 3 packages cream cheese, softened
  • 3 eggs
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350°F.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
  3. In a separate bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, allspice, and tahini.
  4. In another bowl, beat cream cheese until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Pour half of the cream cheese mixture over the crust. Spoon half of the pumpkin mixture over the cream cheese. Repeat with remaining cream cheese and pumpkin mixtures.
  6. Swirl with a knife to create a marbled effect.
  7. Bake for 50-60 minutes, or until the center is almost set.
  8. Cool completely, then refrigerate for at least 4 hours before serving.
