Ingredients

  • 1 lb fresh halibut fillets, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups potatoes, peeled and diced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the potatoes, chicken or vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil and then reduce heat to simmer for 15 minutes or until the potatoes are tender.
  4. Add the halibut pieces and cook for an additional 5 minutes or until the fish is cooked through.
  5. Stir in the milk and heavy cream. Cook for another 5 minutes to heat through.
  6. Remove the bay leaf and discard.
  7. Serve the chowder hot, garnished with chopped fresh parsley.
