Ingredients

  • 2 tablespoons of olive oil
  • 2 cups of chopped onion
  • 1 cup of chopped celery
  • 2 cloves of garlic, minced
  • 2 tablespoons of all-purpose flour
  • 2 cups of chicken broth
  • 1 cup of heavy cream
  • 2 cups of diced, cooked turkey
  • 1 teaspoon of dried thyme
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, celery, and garlic, and cook until the vegetables are softened, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Add the chicken broth and bring to a boil.
  5. Reduce the heat and simmer for 10 minutes.
  6. Stir in the cream, turkey, and thyme, and simmer for an additional 10 minutes.
  7. Season with salt and pepper, to taste.
  8. Serve warm.
