Ingredients
- 2 tablespoons of olive oil
- 2 cups of chopped onion
- 1 cup of chopped celery
- 2 cloves of garlic, minced
- 2 tablespoons of all-purpose flour
- 2 cups of chicken broth
- 1 cup of heavy cream
- 2 cups of diced, cooked turkey
- 1 teaspoon of dried thyme
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, celery, and garlic, and cook until the vegetables are softened, about 5 minutes.
- Stir in the flour and cook for 1 minute.
- Add the chicken broth and bring to a boil.
- Reduce the heat and simmer for 10 minutes.
- Stir in the cream, turkey, and thyme, and simmer for an additional 10 minutes.
- Season with salt and pepper, to taste.
- Serve warm.
