Ingredients

  • 2 cups cooked turkey, shredded
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded Mexican cheese blend
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (10 ounces) red enchilada sauce
  • 8 small flour tortillas
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  2. In a large bowl, combine shredded turkey, cream cheese, Mexican cheese blend, garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and black pepper. Mix until well combined.
  3. Spread 1/3 cup of enchilada sauce in the bottom of the prepared baking dish.
  4. Fill each tortilla with 1/3 cup of the turkey-cheese mixture. Roll up each tortilla and place in the prepared dish. Pour the remaining enchilada sauce over the top of the enchiladas.
  5. Bake for 30 minutes or until the enchiladas are heated through and the cheese is melted and bubbly.
  6. Garnish with fresh cilantro and serve.
