Ingredients
- 2 cups cooked turkey, shredded
- 1/2 cup cream cheese, softened
- 1/2 cup shredded Mexican cheese blend
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (10 ounces) red enchilada sauce
- 8 small flour tortillas
- 1/4 cup chopped fresh cilantro, for garnish
Directions
- Preheat oven to 350°F. Grease a 9x13-inch baking dish.
- In a large bowl, combine shredded turkey, cream cheese, Mexican cheese blend, garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and black pepper. Mix until well combined.
- Spread 1/3 cup of enchilada sauce in the bottom of the prepared baking dish.
- Fill each tortilla with 1/3 cup of the turkey-cheese mixture. Roll up each tortilla and place in the prepared dish. Pour the remaining enchilada sauce over the top of the enchiladas.
- Bake for 30 minutes or until the enchiladas are heated through and the cheese is melted and bubbly.
- Garnish with fresh cilantro and serve.
