Baked and Poached Tilapia

Ingredients

  • 2 Tilapia fillets
  • 1/4 cup of olive oil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1/2 cup of white wine
  • 2 cloves of garlic, minced
  • 1/4 cup of freshly chopped parsley

Directions

  1. Preheat oven to 350°F.
  2. In a shallow dish, combine olive oil, salt, and pepper. Place Tilapia fillets in the mixture and coat both sides.
  3. Place fillets on a greased baking sheet and bake for 15 minutes.
  4. Meanwhile, in a large saucepan, heat white wine, garlic, and parsley until boiling.
  5. Reduce heat to a simmer and add Tilapia fillets. Cover and cook for an additional 15 minutes.
  6. Remove Tilapia fillets from heat and serve warm.
