- 3 cups cooked white or brown rice
- 1/4 cup butter or margarine
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced bell pepper
- 1/2 cup slivered almonds
- 1/2 cup raisins
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped parsley
Directions
- Melt butter in a large skillet over medium heat.
- Add onions, celery, and bell pepper and cook until softened, about 5 minutes.
- Add almonds and raisins and cook for an additional 2 minutes.
- Add cooked rice and mix well.
- Season with salt and pepper, stirring to combine.
- Add parsley and cook for an additional 2 minutes.
- Serve hot.
