Ingredients

  • 3 cups cooked white or brown rice
  • 1/4 cup butter or margarine
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/2 cup slivered almonds
  • 1/2 cup raisins
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped parsley

Directions

  1. Melt butter in a large skillet over medium heat.
  2. Add onions, celery, and bell pepper and cook until softened, about 5 minutes.
  3. Add almonds and raisins and cook for an additional 2 minutes.
  4. Add cooked rice and mix well.
  5. Season with salt and pepper, stirring to combine.
  6. Add parsley and cook for an additional 2 minutes.
  7. Serve hot.
