Ingredients
- 1 can of chickpeas, drained and rinsed
- 1/2 cup of tahini
- 2 cloves of garlic, minced
- 1/4 cup of freshly squeezed lemon juice
- 1/4 cup of olive oil
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of freshly ground black pepper
- 1/2 cup of arugula leaves, chopped
Directions
- In a food processor, combine the chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper.
- Process until smooth and creamy.
- Add the arugula leaves and pulse the food processor until the arugula is finely chopped and incorporated into the hummus.
- Serve with pita chips, vegetables, or crackers.
