Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup of tahini
  • 2 cloves of garlic, minced
  • 1/4 cup of freshly squeezed lemon juice
  • 1/4 cup of olive oil
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of freshly ground black pepper
  • 1/2 cup of arugula leaves, chopped

Directions

  1. In a food processor, combine the chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper.
  2. Process until smooth and creamy.
  3. Add the arugula leaves and pulse the food processor until the arugula is finely chopped and incorporated into the hummus.
  4. Serve with pita chips, vegetables, or crackers.
