Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (14.5 ounces) chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 1/4 cup heavy cream

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute.
  4. Stir in the diced tomatoes, chicken broth, Italian seasoning, thyme, and pepper. Bring to a boil.
  5. Reduce the heat to low and simmer for 10 minutes.
  6. Remove from the heat and let cool slightly.
  7. Transfer the soup to a blender or food processor and blend until smooth.
  8. Return the soup to the pot and stir in the cream.
  9. Simmer for 5 minutes, stirring occasionally, until heated through.
  10. Serve hot.
