Ingredients

  • 1 cup old-fashioned oats
  • ½ cup almonds, roughly chopped
  • ½ cup walnuts, roughly chopped
  • ½ cup dried cranberries
  • 1 teaspoon ground cinnamon
  • 2 tablespoons honey
  • 2 tablespoons coconut oil, melted

Directions

  1. Preheat oven to 350°F (175°C). Grease an 8x8-inch (20x20 cm) baking pan with cooking spray.
  2. In a large bowl, combine oats, almonds, walnuts, dried cranberries and cinnamon. Stir until everything is evenly mixed.
  3. In a small bowl, whisk together honey and coconut oil until combined. Pour the mixture over the oats and stir until all ingredients are evenly coated.
  4. Pour the mixture into the prepared baking pan. Using a spoon or spatula, press the mixture into the pan until it is evenly distributed.
  5. Bake for 20-25 minutes, until golden brown. Let cool for at least 10 minutes before cutting into bars.
