Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 jalapeño pepper, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 2 cups frozen corn kernels
  • 1 (14-ounce) can diced tomatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • Juice of 1 lime

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and jalapeño and cook until the vegetables are softened, about 5 minutes.
  2. Add the cumin, paprika, chili powder, and salt and stir to combine.
  3. Add the frozen corn and cook for another 5 minutes.
  4. Add the tomatoes and black beans and cook until heated through, about 5 minutes.
  5. Stir in the cilantro and lime juice and remove from the heat.
  6. Garnish with additional cilantro, if desired.
