Directions
Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and jalapeño and cook until the vegetables are softened, about 5 minutes.

Add the frozen corn and cook for another 5 minutes.
Add the tomatoes and black beans and cook until heated through, about 5 minutes.
Stir in the cilantro and lime juice and remove from the heat.
Garnish with additional cilantro, if desired.
