Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 1 jalapeno, diced
  • 1 red bell pepper, diced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of dried oregano
  • 1 can (14.5 ounces) of diced tomatoes
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 can (15 ounces) of corn, drained and rinsed
  • 1 can (15 ounces) of kidney beans, drained and rinsed
  • 2 cups of vegetable stock
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 pound of okra, sliced into 1/4 inch pieces

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion, garlic, jalapeno, and red bell pepper. Cook for 5 minutes, stirring occasionally.
  3. Stir in the cumin, chili powder, and oregano and cook for 1 minute.
  4. Add the tomatoes, beans, corn, vegetable stock, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
  5. Stir in the okra and simmer for 15 minutes, stirring occasionally.
  6. Serve hot.
