Ingredients
2 tablespoons of olive oil
1 onion, diced
4 cloves of garlic, minced
1 jalapeno, diced
1 red bell pepper, diced
1 teaspoon of ground cumin
1 teaspoon of chili powder
1 teaspoon of dried oregano
1 can (14.5 ounces) of diced tomatoes
1 can (15 ounces) of black beans, drained and rinsed
1 can (15 ounces) of corn, drained and rinsed
1 can (15 ounces) of kidney beans, drained and rinsed
2 cups of vegetable stock
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/2 pound of okra, sliced into 1/4 inch pieces
Directions
Heat the olive oil in a large pot over medium-high heat.
Add the onion, garlic, jalapeno, and red bell pepper. Cook for 5 minutes, stirring occasionally.
Stir in the cumin, chili powder, and oregano and cook for 1 minute.
Add the tomatoes, beans, corn, vegetable stock, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
Stir in the okra and simmer for 15 minutes, stirring occasionally.
Serve hot.
