Directions
Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 3 minutes. Add the garlic and ginger and cook for 1 minute.
Add the tomatoes, honey, lime juice, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
Add the salmon and simmer for another 10 minutes, stirring occasionally, until the salmon is cooked through.
Garnish with cilantro, if desired, and serve.
Interesting Facts
This stew is a great way to use up leftover salmon. Simply add the cooked salmon to the stew in step 3 and heat through.
For a spicier stew, add a pinch of red pepper flakes or a diced jalapeno pepper.
For a heartier stew, add a can of drained and rinsed black beans or chickpeas.
