Cilantro-Lime Grilled Tofu

Ingredients

  • 1 (14-ounce) package extra-firm tofu
  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste

Directions

  1. Drain the tofu and place it on a plate lined with paper towels. Press on the tofu to remove any excess moisture. Cut the tofu into 1/2-inch cubes.
  2. In a medium bowl, combine the olive oil, lime juice, cilantro, garlic powder, cumin, and salt and pepper. Whisk to combine.
  3. Add the cubed tofu to the bowl and toss to coat in the marinade. Allow to marinate for 30 minutes.
  4. Preheat a grill over medium-high heat. Oil the grill grates to prevent sticking.
  5. Grill the tofu for 8-10 minutes, flipping once halfway through, until golden brown on the outside and cooked through.
  6. Serve the tofu with grilled vegetables or over a salad.
