Ingredients

  • 1 medium acorn squash, halved and seeded
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the squash halves cut-side up in a baking dish. Brush each half with olive oil and sprinkle with salt, pepper, garlic powder, and red pepper flakes.
  3. Bake in preheated oven for 20 minutes.
  4. Sprinkle Parmesan cheese over the squash and bake for an additional 5 minutes, or until cheese is melted and squash is tender.
