Ingredients

  • 1 cup butter, softened
  • 1 cup cookie butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350°F (177°C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine the butter, cookie butter, granulated sugar, and light brown sugar. Beat with an electric mixer on medium speed until creamy, about 2 minutes.
  3. Add eggs one at a time, mixing after each addition, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. Using a cookie scoop, scoop dough onto prepared baking sheets. Bake for 10-12 minutes, until cookies are lightly golden.
  6. Allow cookies to cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
