Ingredients
1 cup long grain white rice
1/2 cup coconut milk
1/2 cup vegetable broth
1/2 teaspoon salt
1 teaspoon sugar

1 can black beans, drained and rinsed
Directions
In a medium saucepan, combine the rice, coconut milk, vegetable broth, salt, and sugar.
Bring the mixture to a boil over high heat, then reduce the heat to low, cover, and simmer for 15 minutes.
After 15 minutes, remove the pan from the heat and let it sit, covered, for another 5 minutes.
