Ingredients

  • 2 cans of tuna, drained
  • 1/4 cup mayonnaise
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 slices of cheddar cheese
  • 2 tablespoons butter, softened

Directions

  2. Spread butter on one side of each slice of bread.
  3. Place two slices of bread, buttered side down, on a preheated skillet or griddle over medium heat.

  5. Top each tuna-filled bread slice with a slice of cheddar cheese.
  6. Place the remaining slices of bread on top, buttered side facing up.
  7. Cook for 2-3 minutes, or until the bottom bread slices are golden brown.
  8. Carefully flip the sandwiches and cook for another 2-3 minutes, until the cheese is melted and the second side is golden brown.
