Ingredients

  • 1 pound tilapia fillets, diced
  • 1 cup fresh lime juice
  • 1 cup fresh lemon juice
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onions
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno pepper, seeded and minced
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Directions

  1. In a glass or ceramic bowl, combine the diced tilapia, lime juice, and lemon juice. Make sure the fish pieces are fully submerged in the citrus juices. Cover the bowl and refrigerate for 20-30 minutes, stirring occasionally.
  2. Meanwhile, in a separate bowl, combine the diced tomatoes, red onions, cilantro, and jalapeno. Mix well and set aside.
  3. After marinating, remove the tilapia from the citrus juices, and discard the liquid. Add the marinated fish to the tomato mixture and gently stir to combine. Season with salt and pepper to taste.
  4. Return the ceviche to the refrigerator and let it chill for an additional 10-15 minutes to allow the flavors to meld together.
