Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • For the cream cheese frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add the vegetable oil, eggs, grated carrots, crushed pineapple, chopped walnuts, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Divide the batter equally between the prepared cake pans.
  5. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.
  7. Meanwhile, prepare the cream cheese frosting by beating the softened cream cheese and butter together in a mixing bowl until creamy and smooth.
  8. Gradually add the powdered sugar, one cup at a time, while continuing to beat the mixture.
  9. Add the vanilla extract and beat until the frosting is light and fluffy.
  10. Once the cakes have cooled, use a serrated knife to level the tops if necessary.
  11. Place one cake on a serving plate and spread a layer of cream cheese frosting on top.
  12. Place the second cake on top and frost the top and sides with the remaining cream cheese frosting.
  13. Optional: Decorate the cake with additional chopped walnuts or grated carrots.
  14. Chill in the refrigerator for at least one hour before serving.
  15. Enjoy the delicious and moist carrot cake with cream cheese frosting!
