Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 3/4 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 6 to 7 apples, peeled, cored, and sliced
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons unsalted butter, melted
- 1 tablespoon lemon juice
Directions
- In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or fork to cut it into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, while mixing with your hands. Mix just until the dough comes together. Be careful not to overmix.
- Divide the dough into two equal portions and shape each portion into a disk. Wrap each disk with plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 425°F (220°C).
- In a separate bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, melted butter, and lemon juice. Mix well until all the apples are coated.
- Remove one disk of dough from the refrigerator and roll it out on a lightly floured surface. Transfer the rolled dough onto a 9-inch pie dish and press it gently against the bottom and sides of the dish.
- Pour the apple filling into the pie dish.
- Remove the second disk of dough from the refrigerator and roll it out into a circle slightly larger than the pie dish. Cover the pie filling with the rolled-out dough. Trim any excess dough and crimp the edges to seal the pie.
- Cut a few slits on the top crust to allow steam to escape while baking.
- Place the pie on a baking sheet and bake it in the preheated oven for 15 minutes.
- Reduce the oven temperature to 375°F (190°C) and continue baking for an additional 40-45 minutes or until the crust is golden brown and the filling is bubbling.
- Once baked, remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving.
- Serve warm or at room temperature. Enjoy!
