Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 large eggs
  • 1 ½ cups sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • 1 cup orange juice or lemon juice
  • 1/3 cup fresh orange or lemon zest

Directions

  1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate large bowl, beat together eggs, sugar, oil and vanilla until light and fluffy.
  4. Stir in carrots, walnuts, orange juice, and orange zest until everything is well combined.
  5. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  6. Pour batter into prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cake cool in pan for 10 minutes before turning it out onto a wire rack to cool completely.
