Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- 2 large eggs
- 1 ½ cups sugar
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1 cup chopped walnuts
- 1 cup orange juice or lemon juice
- 1/3 cup fresh orange or lemon zest
Directions
- Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a separate large bowl, beat together eggs, sugar, oil and vanilla until light and fluffy.
- Stir in carrots, walnuts, orange juice, and orange zest until everything is well combined.
- Gradually add dry ingredients to wet ingredients, stirring until just combined.
- Pour batter into prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let cake cool in pan for 10 minutes before turning it out onto a wire rack to cool completely.
