Ingredients

  • 1 box white cake mix
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1/3 cup water
  • 1/4 cup ground cinnamon
  • 1/2 cup dark brown sugar
  • 1/2 cup white sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12-cup muffin tin.
  2. In a large bowl, mix together the cake mix, oil, eggs and water until well blended.
  3. In a separate bowl, mix together the ground cinnamon, brown sugar and white sugar.
  4. Scoop a heaping tablespoon of cake batter into each muffin cup. Sprinkle with a teaspoon of the cinnamon-sugar mixture.
  5. Top with another scoop of cake batter and sprinkle with more cinnamon-sugar mixture.
  6. Bake for 18 to 20 minutes in the preheated oven, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Allow cupcakes to cool for 10 minutes before removing from the muffin tin.
