- 1 cup ricotta cheese
- 1/2 cup granulated sugar
- 1/4 cup butter, melted
- 2 eggs

Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, combine ricotta cheese, sugar, butter, eggs, and vanilla extract. Beat until light and fluffy.
- In a separate bowl, whisk together baking powder, baking soda, salt, and flour. Gradually add dry ingredients to wet ingredients and mix until just combined. Fold in chocolate chips.
- Spoon batter into prepared muffin tin. Bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow muffins to cool in tin for 5 minutes before transferring to a wire rack to cool completely.
