Ingredients
1 can of chickpeas, drained and rinsed
1/2 cup of cooked quinoa
1/2 cup of diced red bell pepper
2 cloves of garlic, minced
2 tablespoons of olive oil
1/4 cup of fresh parsley, chopped
1 teaspoon of smoked paprika
2 tablespoons of nutritional yeast
Salt and pepper to taste
4 eggs
Directions
In a large bowl, mash the chickpeas with a fork.
Add the cooked quinoa, diced red bell pepper, garlic, olive oil, parsley, smoked paprika, nutritional yeast and salt and pepper.
Stir until all the ingredients are combined.
In a separate bowl, whisk the eggs until combined.
Add the egg mixture to the chickpea mixture and stir until combined.
Heat a large non-stick skillet over medium-high heat.
Add the chickpea mixture to the skillet and spread evenly.
Cook for 4-5 minutes, or until the edges are golden brown.
Flip the omelette with a spatula and cook for an additional 4-5 minutes.
Serve warm with your favorite toppings.
