Chickpea Omelette

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup of cooked quinoa
  • 1/2 cup of diced red bell pepper
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/4 cup of fresh parsley, chopped
  • 1 teaspoon of smoked paprika
  • 2 tablespoons of nutritional yeast
  • Salt and pepper to taste
  • 4 eggs

Directions

  1. In a large bowl, mash the chickpeas with a fork.
  2. Add the cooked quinoa, diced red bell pepper, garlic, olive oil, parsley, smoked paprika, nutritional yeast and salt and pepper.
  3. Stir until all the ingredients are combined.
  4. In a separate bowl, whisk the eggs until combined.
  5. Add the egg mixture to the chickpea mixture and stir until combined.
  6. Heat a large non-stick skillet over medium-high heat.
  7. Add the chickpea mixture to the skillet and spread evenly.
  8. Cook for 4-5 minutes, or until the edges are golden brown.
  9. Flip the omelette with a spatula and cook for an additional 4-5 minutes.
  10. Serve warm with your favorite toppings.
