Ingredients

- 8 chicken thighs, skinless and boneless
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 cup mushrooms, sliced
- 1/4 cup white wine
- 1/2 cup chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken thighs and cook for 5 minutes, until golden brown.
- Add the onion and garlic and cook for 2 minutes.
- Add the rosemary, mushrooms, white wine, and chicken broth. Bring to a boil.
- Reduce the heat to low and simmer, covered, for 15 minutes.
