Ingredients

  • 1 tablespoon olive oil
  • 8 chicken thighs, skinless and boneless
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 cup mushrooms, sliced
  • 1/4 cup white wine
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken thighs and cook for 5 minutes, until golden brown.
  3. Add the onion and garlic and cook for 2 minutes.
  4. Add the rosemary, mushrooms, white wine, and chicken broth. Bring to a boil.
  5. Reduce the heat to low and simmer, covered, for 15 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped parsley and serve.
