Ingredients

  • 1 cup cooked quinoa
  • 1 pound ground chicken
  • 1/2 cup bread crumbs
  • 1 egg

  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the quinoa, ground chicken, bread crumbs, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Mix together until all ingredients are combined.
  3. Shape the mixture into 1-inch balls.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add the chicken meatballs to the skillet and cook for 5 minutes, flipping once.
  6. Reduce heat to low and cook for an additional 10 minutes.
  7. Add the parsley and stir to combine.
  8. Serve with cooked quinoa.
