Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups apples, peeled and chopped
- 2 tablespoons lemon juice
- 1/2 cup shredded coconut
Directions
- Preheat oven to 350°F (180°C). Grease a 9-inch (23 cm) cake pan.
- In a bowl, sift together the flour, baking powder, and salt; set aside.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.
- Slowly add the dry ingredients to the wet ingredients, mixing well to combine.
- In a separate bowl, combine the apples and lemon juice. Add the apples to the cake batter and mix until just combined.
- Pour the batter into the cake pan and sprinkle the top with the shredded coconut.
- Bake in preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool completely before serving.
