Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and chopped
  • 2 tablespoons lemon juice
  • 1/2 cup shredded coconut

Directions

  1. Preheat oven to 350°F (180°C). Grease a 9-inch (23 cm) cake pan.
  2. In a bowl, sift together the flour, baking powder, and salt; set aside.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. Slowly add the dry ingredients to the wet ingredients, mixing well to combine.
  5. In a separate bowl, combine the apples and lemon juice. Add the apples to the cake batter and mix until just combined.
  6. Pour the batter into the cake pan and sprinkle the top with the shredded coconut.
  7. Bake in preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Let cool completely before serving.
