Cranberry Nut Pie
Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
3/4 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
3 ripe bananas, mashed
3/4 cup chopped mango, pineapple, and/or coconut
Directions
Preheat the oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan.
In a medium bowl, combine the flour, baking soda, and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
Mix in the mashed bananas.
Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the chopped mango, pineapple, and/or coconut.
Pour the batter into the prepared pan and bake for 45 to 60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
