Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 3/4 cup chopped mango, pineapple, and/or coconut

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan.
  2. In a medium bowl, combine the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
  4. Mix in the mashed bananas.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chopped mango, pineapple, and/or coconut.
  7. Pour the batter into the prepared pan and bake for 45 to 60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
  8. Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
