Ingredients

  • 4 chicken thighs, skin on
  • 2 tablespoons soy sauce
  • 2 tablespoons sake
  • 2 tablespoons mirin
  • 1 sweet potato, cubed
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste

Directions

  1. In a medium bowl, combine the soy sauce, sake, mirin, and sugar. Mix well and set aside.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 5 minutes.
  3. Flip the chicken thighs and add the sweet potato. Cook for another 5 minutes, stirring occasionally.
  4. Pour the soy sauce mixture over the chicken and sweet potato. Bring to a simmer and cook for 30 minutes, stirring occasionally.
  5. Season with salt and pepper to taste and serve.
