Ingredients
- 4 chicken thighs, skin on
- 2 tablespoons soy sauce
- 2 tablespoons sake
- 2 tablespoons mirin
- 1 sweet potato, cubed
- 1 teaspoon sugar
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
Directions
- In a medium bowl, combine the soy sauce, sake, mirin, and sugar. Mix well and set aside.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 5 minutes.
- Flip the chicken thighs and add the sweet potato. Cook for another 5 minutes, stirring occasionally.
- Pour the soy sauce mixture over the chicken and sweet potato. Bring to a simmer and cook for 30 minutes, stirring occasionally.
- Season with salt and pepper to taste and serve.
