Ingredients

  • 2 chicken breasts
  • 2 cups mixed greens
  • 1 cup blueberries
  • 1 cup strawberries
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400F.
  2. Season chicken breasts with salt and pepper.
  3. Place chicken breasts on a baking sheet and bake for 30 minutes.
  4. Remove chicken breasts from oven and let cool.
  5. In a large bowl, combine mixed greens, blueberries, strawberries, and cooled chicken breasts.
  6. In a separate bowl, whisk together olive oil, balsamic vinegar, and honey.
  7. Pour dressing over salad and toss to combine.
  8. Serve immediately and enjoy!
