Ingredients

  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced bell pepper
  • 1/2 cup finely diced celery
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste

Directions

  1. In a large bowl, combine the black-eyed peas, onion, bell pepper, and celery.
