Ingredients

  • 1/2 lb of penne pasta
  • 1 red bell pepper, diced
  • 1/2 cup of mango chutney
  • 1/4 cup of diced jalapeños
  • 2 cloves of garlic, minced
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Directions

  1. Cook the penne according to the package instructions.
  2. In a large skillet, heat the olive oil over medium heat. Add the bell pepper and cook until softened, about 3 minutes.
  3. Add in the jalapeños and garlic and cook for 1 minute.
  4. Stir in the mango chutney and cook for 2 minutes.
  5. Add the cooked penne to the skillet and toss to combine.
  6. Season with salt and pepper to taste.
  7. Serve warm.
