Ingredients

  • 4 salmon fillets, skinless
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups canned diced tomatoes
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add tomatoes and basil and bring to a simmer. Cook for 5 minutes more.
  4. Add the salmon fillets to the skillet and season with salt and pepper.
